To Pickle Cucumbers in Slices

Ingredients

• 15 large Cucumbers
• a quart of hot vinegar
• 2 onions shced
• 2 Sharlots
• a good head of garlick
• a handful and half of salt
• one handful of ground pepper
• as much of Cayenne pepper as will lay upon a sixpence

   Pare and cut cucumbers into slices, put them into an earthen jar with hot vinegar, add sliced onions, shallots, garlic, salt, ground pepper, and cayenne pepper.

   It is not good until it has been made half a year.
