Three Egg Cake

Ingredients

• 2C. Sifted Cake Flour
• 1¢ C. Sugar
• 3 tsp. Royal Baking Powder
• 1 tsp. Vanilla
• Eggs, separated
• 3 C. Milk
• i tsp. Salt
• 2/3 C. Butter

Method

   Mix and sift flour, baking powder, and salt.

   Cream shortening until soft and smooth.

   Gradually add 1 C. sugar, creaming until fluffy.

   Beat in vanilla and yolks.

   Add flour alternately with milk, beating until smooth.

   Beat egg whites until stiff and fold into batter.

   Bake in greased pan at 350° for about 1 hour or in muffin pans at 375° for 20-25 minutes.
