Sweet Potato Pone

Ingredients

• 2 cups grated sweet potato
• 1 cup butter
• 1 cup sugar
• */2 cup milk
• 1 teaspoon powdered ginger
• grated rind of one orange

Method

   Blend the sugar and butter, add grated sweet potato and milk; beat well and then add the ginger and orange rind.

   Place in a shallow baking pan and bake in a slow oven.
