Surprise Potatoes. Select 8 medium-sized potatoes, wash and drain them. Bake them in their jackets in a quick oven. Cut off a piece of each lengthwise to form the cover, and scoop out the soft part of the inside. Rub about three parts of this through a fine sieve, and mix with a pat of butter and some double cream ; season with salt, pepper, and nutmeg
