Stuffed Pig’s Feet

Ingredients

• 4 pig’s feet
• 4 pt. water
• 1 gill vinegar
• 1 onion
• A bunch of herbs
• 4 lb. pork sausage meat
• Egg and bread-crumbs
• A little butter and lard

Method

   Wash and scrape the feet, split them, and soak in salt water for 1 hour.

   Rinse and tie together with tape.

   Boil feet in water and vinegar, adding onion, herbs, and salt.

   Simmer until tender.

   Remove tape, take out bones, season, and fill with sausage meat.

   Coat with flour, egg, and bread-crumbs.

   Fry in lard and butter.
