Stuffed Lettuces (Laitues Farcies)

Ingredients

• 2 lettuces
• 1 table-sp. dripping or bacon fat
• 1 onion
• A bunch of herbs
• J lb. cooked meat
• 1 egg
• 2 oz. bread
• 1 or 2 table-sps. milk
• 1 tea-sp. chopped parsley

Method

   Choose nice fresh lettuces with a good heart.

   Remove any coarse leaves and the hard part of the stalk.

   Wash them well and plunge into boiling salted water for about 10 minutes.

   Drain, rinse with cold water, and dry.

   For the stuffing, chop the meat finely and mix with bread soaked in milk.

   Season with pepper, salt, nutmeg, and parsley, binding with beaten egg.

   Divide stuffing between lettuces, tie them, heat dripping or bacon fat in a saucepan, add lettuces, onion, herbs, and stock.

   Cover and cook until tender.

   Arrange on a hot dish, remove string, reduce cooking liquid, and strain over lettuces.
