Stuffed Egg-Plant

Ingredients

• Cut the egg-plant in two
• half a minced onion
• two tablespoonfuls grated crumbs
• a small lump of butter

Method

   Scrape out the inside of the egg-plant, boil with minced ham until soft, drain, and mix with crumbs, onion, salt, and pepper.

   Stuff the egg-plant halves, add butter, and bake for fifteen minutes.

STUFFED EGG-PLANT. Cut the egg-plant in two ; scrape out all the inside and put it in a saucepan with a little minced ham; cover with VEGETABLES, 79 water and boil until soft ; drain off the water ; add two tablespoonfuls grated crumbs,. one ar ee half a minced onion, salt and pepper ; stuff each half of the hull with the mixture ; add_a small lump of butter
