Stuffed Baked Cod

Ingredients

• 1 cod steak
• + teaspoon chopped parsley
• small quantity dripping
• 1 dessertspoon soaked stale bread
• mixed herbs
• seasoning

Method

   Clean the cod and leave it soaking in water for a few minutes.

   Squeeze the water out of the bread and add it to the other ingredients to make the stuffing.

3. 3

   Put the fat in a small roasting tin in the oven and heat until smoking hot.

4. 4

   Remove the centre bone and any others from the fish.

5. 5

   Put in the stuffing, and tie round with a piece of cotton.

6. 6

   Put in the tin with melted fat, and baste immediately.

7. 7

   Cook for 30 minutes, basting periodically during cooking.

8. 8

   Remove cotton and serve.
