Stewed Ox Kidney

Ingredients

• 1 ox kidney
• 2 oz. dripping or butter
• 2 table-sps. flour
• 1 tea-sp. mixed spice
• Salt
• Pepper
• 3 gills stock
• 1 table-sp. chopped onion
• 1 dessert-sp. ketchup
• Boiled rice

Method

   Wash and scald the kidney in boiling water.

   Cut into thin slices, removing fat.

   Mix flour with spice, salt, and pepper.

   Coat kidney pieces in this mixture.

   Melt dripping in a stewpan, brown kidney and onions, then add stock and ketchup.

   Cover and stew slowly until tender.

   Remove grease from gravy, adjust seasoning, and serve with rice.
