Steamed Fish with Sauce

Ingredients

• 1 sole or small plaice
• £ pint of milk
• h oz- °f butter
• °f flour
• A few drops of lemon juice
• Salt

Method

   Fillet and skin the fish, lay fillets on a buttered plate, cover with another plate, set over boiling water, cook until white and firm.

   Break up bones, simmer in milk for ten minutes; melt butter, add flour, stir till smooth, add liquid to make a thick sauce, add lemon juice, extract of meat, and salt; boil gently, strain over fillets, and serve.
