Spinach with Eggs

Ingredients

• one ounce more of butter
• three whites of eggs
• some potatoes
• Plain boiled rice

Method

   Cook the spinach, adding one ounce more of butter.

   Poach the egg whites lightly and place them on the spinach.

   Cut the potatoes into chips and fry them until golden brown.

   Drain well and serve around the spinach and eggs.

   Plain boiled rice served around this dish is also nice.
