Spinach Soup

Ingredients

• 2 quarts spinach
• 2 cups milk
• 6 cups cold water
• 1 clove of garlic
• bit of bay leaf
• 2 tablespoons chopped onion
• 1 teaspoon salt
• cayenne pepper
• celery salt
• 3 tablespoons butter
• 3 tablespoons flour
• ^ cup cream

Method

   Cook spinach in water for thirty minutes.

   Press through a sieve, scald milk with onion and bay leaf, add butter and flour cooked together, strain, add seasonings, and spinach mixture; cook five minutes and serve.

   Garnish with beaten cream.
