Spinach Souffle

Ingredients

• 2 cups cooked spinach
• 3 eggs
• 1% teaspoon salt
• 1 cup cream or top milk
• tg teaspoon pepper
• 1 teaspoon baking powder
• 3 tablespoons butter or oil

Method

   Chop cooked spinach; add salt, pepper and butter with unbeaten egg yolks; mix well.

   Add cream or milk.

   Beat egg whites until frothy, add baking powder, and beat until stiff; then fold into first mixture.

   Turn into greased casserole or baking dish and bake in a moderate oven (350 degrees) 50 minutes.
