Spice Cake

Ingredients

• il/2 cups butter
• l/2 teaspoon allspice
• 4 cups pulverized sugar
• 1 teaspoon grated nutmeg
• 9 egg yolks, well beaten
• l/2 teaspoon mace
• 3% cups sifted cake flour
• 1 teaspoon (baking) soda
• 9 Ggg whites, beaten stiff
• il/2 cups sour cream
• 1 teaspoon cinnamon
• !4 teaspoon salt

Method

   Cream butter and sugar, add egg yolks, well beaten; beat until light and creamy.

   Add flour gradually, alternating with half of beaten egg whites.

   Add spices, then gradually beat in remainder of flour and egg whites.

   Dissolve soda in 1 tablespoon of boiling water, mix with sour cream and stir into cake mixture.

   Turn into a deep buttered cake tin and bake for 1 hour in a moderate oven (350°F).
