Sole Neapolitan

Ingredients

• one tablespoon butter
• one of flour
• one cup of white wine
• one of mushroom liquor
• salt
• pepper
• one onion finely chopped
• a little chives
• a small can of mushrooms

Method

   Blend butter and flour in a saucepan, add wine, mushroom liquor, seasonings, and chopped onion and chives.

   Boil for ten minutes.

   Place a large sole in a baking pan, cover with sauce, and bake for twenty minutes.

   Sprinkle with parsley before serving.
