SNOW PUDDING (LEMON SPONGE) 1 tbs. Knox Gelatine (one envelope) 4 c. lemon juice it ce. cold water 3 egg whites 1c. boiling water or (1c. pine- 1/8 tsp. salt apple juice for variety) 1 tsp. grated lemon 3/4 c. sugar rind Soak gelatine in cold water 5 minutes. Add the boiling water. And stir until the gelatine is dissolved. Add $ c. of the sugar, the salt, lemon rind and lemon juice. Cool. Beat the egg whites until stiff adding { c. sugar while beating. When gelatine mixture has thick- ened, beat until frothy. Add egg whites and continue beating until stiff enough to hold its shape. Chill and serve with boiled custard. Serves 6. Lucile Monson CUSTARD SAUCE 2c. milk 1 tsp. vanilla 3 egg yolks t tsp. salt 3 tbs. sugar Scald the milk in double boiler. Beat the egg yolks slightly, then stir in the sugar and salt. Add the milk a little at a time stirring constantly. Return to the double boiler and cook overhot water, until the mixture just coats the spoon. This takes about 7-8 minutes stirring constantly.
