Snow Cake

Ingredients

• one pound of arrow-root
• one half pound of powdered sugar
• one half pound of butter
• whites of six eggs
• one tea-spoonful of essence of lemon

Method

   Pass the arrow-root through a wire sieve to remove lumps.

   Beat the sugar and butter together to a cream, and add the arrow-root gradually while beating constantly.

   Whip the whites of eggs to a stiff froth, and add to the mixture.

   Beat all together for twenty minutes until smooth and white.

   Add lemon juice, grease a cake tin, pour in the batter, and bake for one and a half hours in a moderate oven.
