Snow Cake

Ingredients

• One pound of arrowroot
• half pound pounded white sugar
• half pound butter
• the whites of six eggs
• flavoring to taste, of essence of almonds, or vanilla, or lemon

Method

   Beat the butter to a cream, stir in sugar and arrowroot gradually while beating.

   Whisk the egg whites to a stiff froth, add to the mixture, and beat well for twenty minutes.

   Pour into a buttered mold or tin and bake in a moderate oven for 1 to 1.5 hours.
