Sledmere Gingerbread

Ingredients

• HALF a pound of butter
• half a pound of castor sugar
• half a pound of golden syrup
• one pound of flour
• half an ounce of ground ginger
• one teaspoonful of carbonate of soda
• four eggs

Method

1. 1

   Melt butter, sugar, and treacle in a stewpan.

   Beat eggs and stir into the melted mixture.

3. 3

   Add ginger and soda, then stir into the flour.

4. 4

   Bake in a deep tin until golden brown for three-quarters of an hour.

   Cut into fingers or squares when cold.
