Skate, Italian Style

Ingredients

• put a skate into a saucepan
• a clove of garlic
• one bay leaf
• one or two sprigs of thyme
• a small lump of butter
• two cloves
• salt and pepper
• dredge in a little flour
• cover the fish with milk

Method

   Cook skate with garlic, bay leaf, thyme, butter, and seasonings in milk.

   Drain, serve with boiled onions and fried bread, topped with cheese, baked until golden.
