Shrimp Rolls (Croustades de Crevettes)

Ingredients

• | doz. small dinner rolls
• 1 cupful picked shrimps
• 1 oz. butter
• 1 dessert-sp. flour
• 1 gill fish stock or milk
• 2 yolks of eggs
• £ gill cream
• Lemon juice

Method

   Cut tops off rolls and scoop out soft part.

   Brush with melted butter and bake until brown.

   Prepare filling by melting butter, adding flour, then fish stock or milk, stirring until boiling.

   Remove from heat, add shrimps, seasoning, and beaten yolks with cream.

   Fill rolls and serve garnished with parsley.
