Shad. I)ress the shad and wipe dry. Place in fresh water. Cut the thick skin in center of back with a sharp knife. Remove the head and wash again. Then cut through center. Place fish in 4 quarts of water with 1 dessertspoon salt. Boil until done. Set on back of range until ready to serve with this sauce : Take 8 ounces of butter and melt, add to it 1 dessertspoon of chopped parsley
