Ingredients

• a pound of dry flour
• one heaped tablespoonful of cream of tartar
• half a teaspoonful of carbonate of soda
• a large pinch of salt
• enough butter-milk to make a soft dough

Method

   Mix dry ingredients well.

   Stir in butter-milk to make a soft dough.

   Roll out to half an inch thick, cut into four pieces, and bake on a hot griddle until risen and pale brown.
