Savoury Rice Croquettes

Ingredients

• | lb. rice.
• | pt. light stock.
• 1 oz. butter.
• 2 or 3 oz. grated cheese.
• 1 table-sp. cream or white sauce.
• Seasoning.
• A little flour.
• Egg.
• bread-crumbs.

Method

   Wash the rice, put it into a saucepan, cover with cold water, and boil for 5 minutes.

   Drain and rinse with cold water.

   Return the rice to the saucepan, add the stock and butter, and simmer until the rice is tender and the stock absorbed.

   Stir occasionally to prevent sticking.

   When ready, add cheese and white sauce or cream, and season.

   Spread on a flat plate to cool, then divide into pieces and shape into rolls.

   Egg and bread-crumb them and fry in boiling fat until browned.
