Sardines en Tartines

Ingredients

• five or six sardines
• a washed, boned, and minced anchovy
• 1oz. of butter
• a dust of cayenne
• a dust of mace
• salt
• a drop or two of lemon juice

Method

   Pound sardines with anchovy, butter, cayenne, mace, salt, and lemon juice.

   Spread on thin brown bread, roll, and serve with watercress.
