Roasted Ducks

Ingredients

• half a pound of bread-crumbs
• three ounces of butter
• one large onion grated
• one teaspoon of salt
• half teaspoon of pepper

Method

   Clean and truss the ducks.

   Make a dressing with breadcrumbs, butter, onion, salt, and pepper.

   Season ducks inside and out, place in a dripping-pan with water, and baste often.

   Prepare gravy from giblets in the dripping-pan, thickening with flour.
