Rice with Tomato Sauce

Ingredients

• 2 C. tomatoes
• 3 T. butter
• 1 slice onion
• 3 T. flour
• 2 pepper corns
• i t. salt
• i C. rice

Method

   Boil rice by Chinese method.

   Cook tomato, onion, pepper, and salt together until tomato is soft, then rub through a strainer.

   Melt butter in a saucepan.

   Add flour and stir until smooth.

   Place on fire and cook until it bubbles.

   Add strained tomato and boil two minutes, stirring constantly.

   Add boiled rice to the tomato sauce, re-heat and serve as vegetable.
