Rice Croquettes

Ingredients

• 1 cup boiled rice
• 2 tablespoons sugar
• a little nutmeg or lemon peel
• 1 egg beaten
• 1 teaspoon butter

Method

   Mix well; rice should be warmed.

   Flour the hands when shaping into croquettes.

   Egg and crumb, fry in deep fat to a delicate brown; drain on brown paper; serve with syrup or pudding sauce for dessert, or as sweet entertainment at lunch.
