Rice Croquettes

Ingredients

• half a pound of rice
• one quart of milk
• a teacup of sugar
• a very little butter
• yolks of one or two eggs
• flavoring
• a little salt

Method

   Soak rice for 3-4 hours, then cook with milk and salt in a steamer until done.

   Stir in sugar, egg yolks, butter, and flavoring.

   Form into balls, fill with marmalade, roll in egg and breadcrumbs, and fry in hot lard.
