Rice Cakes

Ingredients

• 1 cup boiled rice
• 1 egg
• 1 cup flour
• 1 tablespoon sugar
• 1/2 cup milk
• 3/4 teaspoon salt
• 1 teaspoon baking powder
• A little ground cinnamon or grated nutmeg can be added.

Method

   Mix rice, milk, beaten egg, sugar, and salt.

   Sift flour and baking powder into the mixture and stir well.

   Bake on a hot griddle, allowing a tablespoon to a cake.

   Serve with maple or brown sugar.
