Reindeer Tongue, to Boil

Ingredients

• the tongue of the reindeer
• soak the tongue in cold water for three hours

Method

   Soak the tongue in cold water for three hours.

   Put it in a dry place until dry, then soak it again, repeating this process three times.

   When ready to dress, scrape it well, put it into a saucepan with enough cold water to cover it, bring slowly to the boil, and skim well.

   Simmer until tender, about three hours.

   Serve on a neatly-folded table-napkin, garnished with parsley.
