Red Mullets with Sweet Herbs

Ingredients

• an ounce of butter
• a glass of port wine
• a little 'A 1' sauce
• anchovy

Method

   Place the mullets in a pan with butter, A1 sauce, anchovy, and port wine.

   Bake in the oven or over a slow fire.

   Once done, remove the fish to a dish, add chopped mushrooms, parsley, shallot, nutmeg, lemon juice, and flour to the liquor, stir over a slow fire, pour over the mullets, and serve hot.
