Red Mullet, To Bake

Ingredients

• 1 or 2 red mullet
• 1 dessert-sp. chopped parsley
• 1 tea-sp. lemon juice
• Pepper
• Salt
• 1 or 2 table-sps. breadcrumbs
• 1 oz. butter

Method

   Choose one large or two small red mullets, clean and prepare them, score the skin across on both sides.

   Grease a fireproof dish, sprinkle with some parsley and breadcrumbs, lay the fish on top, season with pepper, salt, and lemon juice, sprinkle with the rest of the parsley and breadcrumbs, lay on butter in small pieces, and bake in a moderate oven until ready.
