Red Cabbage Relish

Ingredients

• 1 qt raw, red cabbage
• 1 qt boiled, red beats
• 2 cups sugar
• 1 tablesp salt
• 1 teasp black pepper
• 1/2 teasp red pepper
• 1 cup grated horseradish
• enough cold vinegar to cover

Method

   To the chopped raw red cabbage and boiled red beets, add sugar, salt, black pepper, red pepper, grated horseradish, and enough cold vinegar to cover.

   This requires no boiling and will keep indefinitely when put up in air-tight jars.
