Ratafia, Coffee

Ingredients

• Best Turkey Coffee, roasted and ground 1 lb.
• Best Loaf Sugar 20 oz.
• Cinnamon and Cloves, beaten, each ½ oz.
• Cinnamon and Cloves, beaten, each ½ oz.
• Nutmeg ½ oz.
• Sweet Almonds, beaten to a paste 1 oz.
• Bitter do 1 oz.
• Isinglass, dissolved in a little water ¼ oz.
• Proof Spirit of Wine 1 gall.

Method

   Cork up the jar immediately after adding the spirit, seal, and tie a bladder over it; set the jar in hot water for ten hours, then shake well, and set it in the sun for a month.

   Strain through a fine sieve and filter until perfectly clear; bottle in small bottles, cork well and seal.
