Rabbit with Rice (Lapin au Riz)

Ingredients

• 1 tender rabbit
• 2 table - sps. chopped onion
• 2 oz. butter or dripping
• 1 cupful rice
• 1 cupful tomato puree
• 1 pt. light stock
• Seasoning
• Rolls of bacon

Method

   Wash and clean the rabbit, cut into neat joints or small pieces.

   Melt dripping or butter in a stewpan, add chopped onion and washed rice, cook without browning.

   Add rabbit, cook a few minutes, then add stock and tomato puree.

   Season, cover, and simmer until rice and rabbit are tender and nearly dry.

   Shake saucepan occasionally to prevent sticking.

   Serve neatly garnished with rolls of bacon.
