Rabbit with Mushrooms (Lapin aux Champignons)

Ingredients

• 1 young rabbit
• 2 oz. butter
• 6 to 8 oz. fresh mushrooms
• 1 cupful thin cream
• A bunch of herbs
• Pepper
• Salt

Method

1. 1

   Melt half the butter in a saucepan, add mushrooms and stir until brown.

   Lift out, heat remaining butter, add rabbit cut into small pieces, brown slightly, add onion, pepper, and salt.

   Cover and cook for 10-15 minutes.

   Moisten with warmed cream, add herbs, and cook until rabbit is tender.

   Return mushrooms 10 minutes before serving.
