Queen Pudding

Ingredients

• 0.5 pint milk
• 1 oz. butter
• 1 tablespoonful jam
• 0.5 teaspoonful vanilla
• 2 eggs
• 2 tablespoonfuls sugar
• 0.5 pint white bread crumbs

Method

   Boil the milk with the butter, add one tablespoonful sugar to the bread crumbs, pour over the milk, add the beaten yolks and vanilla.

   Pour into a buttered dish, bake for 20 to 30 minutes until set.

   Spread jam on top, beat the egg whites to a stiff froth, add the remainder of the sugar, pile on top, and bake until slightly brown.

   Serve hot or cold.
