Preserved Citron Melons

Ingredients

• 6 lbs melon
• 3 lbs sugar
• the juice and yellow rind of 4 lemons
• a small piece of green ginger root

Method

   Peel and slice the melons, then boil them in a little water for about half an hour until clear.

   Drain and cover with cold water overnight.

   The next morning, boil the ginger in water, add sugar, and when melted, add lemon peel.

   Boil and skim, then add lemon juice and melon slices, boiling until transparent and soft.

   Can while hot.
