Potato Pancakes

Ingredients

• 2 eggs
• 1% teaspoon flour
• 1% teaspoon baking powder
• 1 teaspoon salt
• 2 cups grated raw potatoes
• 1 tablespoon grated onion
• 1 teaspoon chopped parsley
• 2 tablespoons butter or margerine

Method

   Mix all ingredients together.

   Heat butter or margarine in a skillet, drop spoonfuls of the mixture into the skillet, and cook until golden brown on both sides.
