Potato Croquettes

Ingredients

• six boiled potatoes
• three tablespoonfuls of ham
• a little grated nutmeg
• pepper to taste
• sauce to taste
• some chopped parsley
• the yolks of three or four eggs

Method

   Pass the boiled potatoes through a sieve; add the ham, nutmeg, pepper, sauce, and parsley; work in the egg yolks, shape into balls, roll in bread crumbs, and fry in hot lard.

   Serve with fried parsley.
