Ponciana Cake

Ingredients

• One pound of butter
• One pound of sugar
• One pound of flour
• Juice and rind of one lemon
• Nine eggs
• One and one-fourth pounds of Almonds (in shell)
• One-half pounds of citron
• One-half pound of raisins

Method

   Cream butter and sugar and add to well beaten yolks.

   Next add alternately the flour and the whites beaten stiff, then the fruits, which have been cut fine and dredged with flour, and lastly the nuts.

   Bake in a slow oven.
