Pineapple Slices

Ingredients

• 1 packet of Green’s Sponge Mixture (Lemon or Madeira Flavour)
• 2 ozs. Butter
• 2 Eggs
• a good pinch of Salt
• 1 or 2 slices of tinned Pineapple
• about sixpennyworth of Cream (whipped)

Method

   Whisk Eggs with Salt, add Sponge Mixture, and Butter.

   Spread in a greased Sponge Roll Tin and bake for 8-10 minutes.

   Cool, cut in half, mix Pineapple with Cream, spread on one half, top with the other, and cut into portions.
