Pine-apple Cream (Crème d’Ananas)

Ingredients

• 1 small tin pine-apple
• | pt. custard
• § oz. gelatine
• 1 table-sp. lemon or orange juice
• 2 gills double cream
• Some lemon or wine jelly
• A few pistachio nuts

Method

1. 1

   Decorate a quart mould with jelly, small pieces of pine-apple, and chopped pistachio nuts.

   Cut some pine-apple into dice to fill a tea-cup.

   Rub some through a sieve with syrup to moisten.

4. 4

   Dissolve gelatine in syrup, strain into warm custard, add pine-apple dice, puree, lemon or orange juice, and sugar if needed.

   Mix well, then stir in whipped cream.

   When almost setting, pour into the prepared mould and cool until firm.

   Turn out and decorate with chopped jelly or fern leaves.
