Pickled Oysters

Ingredients

• 4 doz large oysters
• 1 teasp pepper
• 2 blades of mace
• 1 level tablesp salt
• 6 or 7 tablesp vinegar

Method

   Wash and dry oysters, strain the liquor and add pepper, mace, salt, and vinegar.

   Simmer oysters in this liquor for a few minutes, then put them in a jar.

   Boil the pickle, skim, cool, and pour over oysters.

   Seal jar air tight.
