Pickled Fish

Ingredients

• good-sized Soles
• 1 oz. Mango Relish
• 6 Large Chillies
• 6 Large Onions
• 1 quart Vinegar
• 1 oz. Curry Powder
• Salt to taste

Method

   Fry the fish until brown in lard, drain and cool.

   Fry sliced onions until brown, add curry powder, chillies, salt, and mango relish.

   Stir to a paste, add vinegar to moisten.

4. 4

   Layer fish in a jar with the mixture and boiled onion rings in vinegar.

   Cork well and let stand until cool.
