Pecan Cake

Ingredients

• 1 lb butter
• 1 lb sugar
• 2 lbs seeded raisins
• 1 lb shelled pecans
• 2 nutmegs
• 6 eggs
• 1 large cup whiskey
• 1-3 cup of black molasses
• % cup of orange peeling grated
• 1 heaping teaspoon of Royal baking powder
• 1 lb flour

Method

   Cream butter and sugar, add beaten egg yolks, then mix in nutmeg, molasses, whiskey, and orange peeling.

   Combine flour and baking powder, then alternate adding flour and beaten egg whites.

   Fold in floured raisins and pecans.

   Bake in a greased mold with a pan of cold water above it for 3.5 hours starting with a slow fire.
