Parliament or 'Parley' Cakes

Ingredients

• two ounces of fresh butter
• one pound of best treacle
• one pound of flour
• a tablespoonful of powdered ginger
• a piece of pearlash the size of a nut
• a little alum

Method

   Put the butter and treacle in a jar near the fire until the butter is dissolved.

   Pour the liquid over the flour, add ginger, pearlash, and alum.

   Beat until smooth, then cool overnight.

   Roll out thin, cut into squares, and bake on a buttered tin in a moderate oven for 20 to 30 minutes.
