Oyster Salad

Ingredients

• Two dozen fresh oysters
• 2 heads of celery
• about >^ as much tender, white cabbage
• mayonnaise salad dressing

Method

   Wash celery and cabbage, boil in salted water for 5 minutes, drain and chop fine.

   Drain oyster liquor, boil and skim it, add vinegar, peppercorns, pepper sauce, and salt.

   Scald oysters without boiling, drain, and chill.

   Season chopped celery and cabbage with oil and vinegar, layer in a dish with oysters, and top with mayonnaise.
