ORANGE CHIPS. — Pare some oranges, soak the peel in salted water for twelve hours, then boil it in the liquor till tender ; drain, and cut it in slices. Squeeze the juice of the fruit through a sieve, and put it with the peel into a dish with its weight in sugar ; simmer till the chips candy, stirring at frequent intervals ; and set them in a cool room for three or four weeks
